Cooking With Laurie Visits Hicks Valley Cattle Co.

In February of 2011 my very first episode of ‘Cooking With Laurie’ was filmed…my first ‘victim’ was Billy Barboni.  Billy and I go way back, attending Lincoln School together, (he is a few years older ; ) and that is why I still call him Billy…or Dr. Barboni when my co-pilot is at the vets office (Billy is Bart’s vet).  The Barboni Family has been in the news quite a bit lately for the preservation of their land by MALT.  It is a beautiful piece of property for the raising of grass fed beef.

I wanted this month’s recipe to tie into St. Patrick’s Day, and was pleasantly surprised to learn that Oliver’s Market in Cotati is going to have ‘Hicks Valley Cattle Co. Corned Beef’ ready just in time for the celebration.  Vince at Oliver’s Market Meat counter informed me that they were corning the beef in their own brine for20 days and the corned briskets would be ready in time for St. Patrick’s Day.  The traditional way of cooking corned beef is to simmer it for quite some time…I hope you give my recipe a try…it is so easy and comes out perfect every time!!

Baked Corned Beef with a Kick

This is the only way I will cook corned beef… Wrapped in foil and oven baked, no mess to clean-up and the BEST part…the corned beef comes out PERFECTLY cooked every time. 

  • 1 Corned Beef
  • ½ cup of your favorite hot sauce (I prefer F.A. Nino’s Mango Habanero)
  • Veggies of choice
  1. Preheat oven to 325’.
  2. Cut a piece of foil 3 times bigger than your 9” x 13” baking pan.  Line pan with foil.
  3. Rinse the corned beef with cold water and pat dry with paper towels.  Trim off the outer layer of fat.  Place meat in foil lined pan.  Coat the top of meat with an even layer of hot sauce.  At this point you may add carrots and halved small red potatoes around the corned beef.  Bring up the foil edges and fold to make an airtight seal.
  4. Bake for 3 ½ hours.  Remove from oven and let sit for 10 minutes.  Carefully open foil, remove corned beef (and veggies if used).  Slice and serve your perfectly cooked corned beef!
