This side dish made our sister Kathryn love cauliflower but who wouldn’t love this comforting side dish. The rich cheeses and half and half are a splurge but with Thanksgiving coming up its perfect to serve alongside your turkey!


Cauliflower Au Gratin

  • 1 head cauliflower
  • 1 cup grated Gruyere cheese
  • ¼ cup grated Parmigiano Reggiano cheese
  • 1 cup half and half
  • ¼ teaspoon paprika
  • ½ teaspoon salt
  • Olive oil cooking spray

Preheat oven to 350 degrees and spray an 8 x 8 inch baking dish with cooking spray, set aside. Grate half of the cauliflower head into tiny pieces; chop the other half into very thin slices. Mix the cauliflower together with the cheeses, cream, and salt. Pour into baking dish, sprinkle paprika evenly over the top and bake for about 1 hour or until top is golden and cauliflower is tender. Serves 6
